Spam Fried Rice


 Spam Fried Rice

    Mise en Place

4 Cups Cooked White Rice, Cooled, possibly left over*

2 Tablespoons Neutral Oil (Vegetable, Corn, Canola)

2 Eggs, beaten plus Pinch Salt

1-3 Cloves Garlic, minced

1 Cup Frozen Peas and Carrots (thawed)

½ Cup Frozen Corn (thawed)

1 Bunch Green Onions, Chopped, tops separated for later

7 oz (1 tin) Low Sodium Spam, Diced same as corn, carrots, peas

3 Tablespoons Neutral Oil

¼ Cup Low Sodium Soy Sauce

1-3 Tablespoons Sriracha 

1 Tablespoon Black Sesame Seeds (optional)

1 Small Mixing Bowl

Trays/bowls for Mise en Place

Stirring Spoon or Silicon Spatula


         Steps
1. Heat 2 Tbls Oil in 12" pan

2.  Add beaten Eggs, stir until you have.a soft scramble, scrape eggs back into same bowl.

3.  Wipe out pan before adding 3 Tbls Oil, heat again.

4.  Saute' Onion Whites and Garlic for about 1 minute, just until first signs of browning.

5.  Add Carrots, Peas, Corn and Spam, Continue to stir.  About 2-3 minutes.

6.  Bring back the soft Eggs into the panand stir for 1 minute.

7. Stirring or tossing until the end, add Rice, then Soy Sauce and Sriracha.  When thoroughly mixed and hot you are done.

8. Sprinkle Black Sesame Seeds over rice before serving


* Basic steamed or boiled rice.  2 cups Long Grain Rice, 3 Cups water.
