Hot Legs - A better deal than Hot Wings

 


Hot Legs

    Mise en Place

12-14 Chicken Drumsticks, patted dry
2 teaspoons Table Salt (4 Kosher)
2 teaspoons Sugar
2 teaspoons Freshly Ground Black Pepper
2 Tablespoons Paprika (or other Powdered Chile)
1/2 teaspoon Onion Powder (not onion salt)
1/2 teaspoon Garlic Powder (not garlic salt)
1/4 teaspoon Cayenne Pepper
1 Bunch Green Onion Tops, finely sliced, set aside for garnish

2/3 Cup Mild Hot Sauce (Tapatio, etc)
1 heaping teaspoon Flour

    Gear
Baking Pan/Half-Sheetpan
Aluminum Foil
2 Tbls Oil (or spray)
Small Mixing Bowl
Measuring Spoons
Liquid Measuring Cup
Tongs
Brush

    Steps
 1.   Pre-heat oven to 375'
 2.  Mix together all dry ingredients EXCEPT flour
 3.  Cover Baking Pan with Aluminum Foil, then oil the foil
 4.  Lay out Drumsticks.  Sprinkle half the spice mix over the drumsticks
 5.  Turn Drumsticks over, Sprinkle other half of spice mix.
 6.  Put into oven on a middle rack, set timer for 15 minutes
 7.  Re-use small bowl, mix together Hot Sauce and Flour
 8.  After timer goes off, brush half of the hot sauce onto the Drumsticks. 
 9.  Bake for 15 more minutes
10. After timer goes off, Turn drumsticks over and brush remaining hot sauce onto the Drumsticks. 
 11.  Bake for 15 more minutes
12.  Check Drumsticks for doneness (170') or cut one open to the bone and look.
13.  Brush Drumsticks with fat pooled into the pan, tray up, garnish with Green Onions
