Jackson Potatoes

 



Jackson Potatoes (serves 6)

    MISE en PLACE
2 Tbsp Unsalted Butter

¼ Yellow Onion, Thinly sliced

2 Tsp Fresh Thyme chopped (1 Tsp Dried Thyme)

1.5# Medium Yukon Gold Potatoes, 1/4" slices

1.5 Cups Heavy Cream

1.5 Tsp Kosher Salt (or 1 cube Chicken Boullion or 1.25 Tsp Table Salt)

8 Grinds Black Pepper

⅓ cup Grated Parmesan Cheese


    GEAR
9" X 13" BAKING PAN

KNIFE, CUTTING BOARD

SAUTEE PAN

SILICON SPATULA

LIQUID MEASURING CUP

    STEPS

1.  Preheat oven to 400'

2. Sweat Onions and Thyme in Unsalted butter.  Spread evenly across bottom of
    9"x13" Baking Pan.

3.  In a large bowl, mix together 1 cup of the cream with the Salt, Pepper, and Cheese.  Toss sliced potatoes in the mixture making sure each slice gets coated 

4.  Shingle the sliced potatoes into the pan making rows.  Pour remaining cream over the top and cover with Aluminum Foil

5.  Bake for 25 minutes

6.  Remove foil, turn oven down to 350' and Bake for 20 minutes.
